Our signature SPICED AIOLI in 3 easy steps:
Designed for culinary precision, SPICED AIOLI captures the science of flavor extraction. Its formula is built on three pillars: (1) fermented black garlic for deep umami, (2) a balanced turmeric, smoked paprika, cumin and camu camu composite for earthiness, smoky warmth and citrus-lift, and (3) Danish smoked sea salt for mineral finish. The spices are crafted to interact synergistically, delivering a creamy, aromatic aioli in every batch.
Ingredients: 1 Egg Yolk, 150ML Light Olive Oil, 1-2 Tbsp SPICED AIOLI, Fresh lemon juice

Step 1
Bloom The Blend
Bloom for depth. Gently heat 1 Tbsp seasoning in 2-3 tsp oil for 20 seconds. Fat unlocks fat-soluble volatiles, intensifying garlic, cumin and smoked paprika while softening turmeric and camu camu tartness.

Step 2
Create the Emulsion
In a narrow bowl, whisk the room-temperature yolk. Begin adding the un-flavoured oil drop-by-drop, whisking constantly; once the mix thickens, continue in a thin, steady stream. Stop at about 120 ml, then whisk in the warm spice-infused oil.
Why it matters: Tiny, gradual additions let the lecithin in yolk surround oil droplets, creating a stable, creamy suspension. Rushing the pour is the chief cause of split aioli.

Step 3
Brighten, Rest & Serve
Whisk in ¼ tsp fresh lemon juice (plus a splash of water if needed for spoonable flow). Cover and let stand 5 minutes.
Serve with your favorite dipping cause. We recommend a classic like French fries, baked sweet potato or fried artichoke.
