A Trio of Premium Olives
OLEA432 flows from the rugged coastal groves of Porto Cesareo, a sunburned stretch of Southern Italy where olive trees grow twisted and defiant, just kilometers from the Ionian Sea. This is olive country, with centuries-old trees rooted deep in limestone soil, battered by salt winds and southern sun
The olives (Ogliarola, Coratina, and Picholine)are harvested early, before they even think about ripening. Greener. Stronger. Packed with polyphenols and flavor compounds that would make lesser oils weep. This early harvest method means a low-acidity oi lwith more bite, more benefits, and a flavor profile that is gourmet like.
Each olive is manually harvested, pressed cold within hours, and never exposed to oxygen or heat. Why? Because freshness and nutrient preservation are law here. It’s tradition. It’s science. It’s non-negotiable. The entire process respects the ancient Salento oil-making lineage, updated with nitrogen-sealed bottling andinert storage in stainless steel silos

Why harvest olives at the green stage?
Early picking secures high phenolic density, low free acidity and a sharper sensory profile. Chlorophyll, oleocanthal and oleuropein remain intact for vivid colour, pepper and measured bitterness.
What is the measured polyphenol level?
Each press batch is laboratory-verified above 500 mg /kg total phenols (Gallic acid equivalent). This figure exceeds EU extra-virgin standards and signals strong oxidative stability.
Why store under nitrogen in stainless steel?
Oxygen exclusion halts lipid oxidation; food-grade nitrogen blankets the surface, while stainless silos block light and hold temperature. Aroma volatiles stay bound; acidity stays constant.
Does the oil require refrigeration after opening?
Cool, dark cupboard storage at 14-18 °C preserves profile for 8 weeks once unsealed. Refrigeration is optional; slight solidification is natural and reversible at room temperature.
