Quick Green YUZU KOSHO Paste (no ferment)

A fast, spoonable paste built from the YUZUKOSHO citrus-pepper salt. Green chile heat meets layered citrus and clean salinity. Designed for immediate use on grilled fish, rice bowls, noodles, and vegetables.


Ingredients


  • 120 g green chiles, stemmed and roughly chopped (jalapeño, serrano, or bird’s eye to taste) 

  • 30 g mixed citrus zest, very finely grated (yuzu if available; or mandarin 15 g, lime 10 g, grapefruit 5 g) 

  • 38 g YUZUKOSHO blend, finely ground to break the flake salt

  • 12 g fresh citrus juice, as needed to bind

Directions

Prep a jar

Sterilise a 250 ml jar and lid. Let dry.

Create the paste

Pound the chiles and citrus zest in a mortar to a coarse paste.

Spice it up

Add the finely ground YUZUKOSHO. Work until cohesive and the crystals dissolve into the mash.

Finish and Refrigerate

Drip in citrus juice until a thick, spoonable paste forms.


Pack into the jar, press out air pockets, seal, and refrigerate for at least 1 hour before using.

  • Classic Yuzu Kosho Paste patterns range from a 50:50 peel to chile ratio with about 20% salt to lower-salt versions near 10%. This quick paste targets roughly 10% salt via the YUZUKOSHO blend. 

  • Green chile choices vary. Jalapeño and serrano give balanced heat; bird’s eye brings higher intensity. Remove seeds to moderate heat and taste.

  • When yuzu is scarce, professional and editorial sources recommend a spectrum from mandarin and grapefruit to lime. The listed mix mirrors that guidance. 

  • Storage guide. Keep refrigerated and use clean spoons. For longer keeping, traditional methods add more salt or include a short ferment of 7 to 10 days before chilling.
