Ground beef seared and crumbled, Taco No1 bloomed in a little oil, then tomato sauce simmered to a glossy reduction. Gentle, steady heat and frequent pan-scrapes keep the texture tender. Guajillo and paprika give a deep brick-red base while cumin, garlic, onion, and oregano layer aromatic warmth, with tomato adding mellow sweetness and lift.

Pick ground chuck in the 85/15 to 90/10 range. The sauce supplies moisture, so a slightly leaner grind keeps the meat saucy but not greasy, and still takes on spice well. If you like a richer finish, blend chuck with a little brisket or short rib for extra beefiness.
