Persian blue salt from Semnan. Rare blue halite with streaks from sylvite in the crystal lattice. Clean, crystalline salinity. Hibiscus for ruby-tart lift.  Dragon fruit for pink-magenta dust. Color from betalains in red pitaya pulp and peel. Butterfly pea flower for a natural color-changing effect. Anthocyanins shift toward violet with citrus. 

Short composition. No fillers.

Use on eggs, crushed potatoes, asparagus, and garden greens. Finish scallops, white fish, carpaccio, oysters, sushi rice, and burrata. Fold into cultured butter or fresh cheese. Rim margaritas and spritzes, then add lemon for the hue shift.

Its crystalline structure has shifted over time, creating natural blue veins that make it one of the world’s most striking salts.
