Ingredients
200 g raw almonds
1 Tbsp organic coconut oil, melted
1 Tbsp Florale No 1 honey , plus extra for drizzle
1 to 2 tsp Matcha Sal blend (ceremonial-grade matcha, vanilla, strawberry crisp, sea salt)
Optional: ½ tsp vanilla powder or a few flakes of Maldon salt, to boost the vanilla and salt notes
Directions
Preheat oven
180 °C / 350 °F.
Toss & Roast
In a bowl, combine almonds with melted coconut oil until evenly coated. Spread in a single layer on a parchment-lined baking sheet. Roast 12–14 minutes, stirring once halfway, until golden and fragrant.
Cool & Sweeten
taste, then stir in extra honey if desired.
Portion
Remove from oven and let almonds rest 3 minutes. Drizzle with Florale No 1 honey while warm, tossing gently to coat.
Finish with Matcha Sal
Transfer nuts to a serving bowl. From height, sprinkle Matcha Sal evenly so the vibrant green powder, vanilla nuance, strawberry sweetness, and salt adhere to the honey glaze.
Serve
Let cool fully. The almonds remain crisp but sticky, with Matcha Sal forming a delicate sheath.
