Cajun Chicken with KAIJU-N and OLEA432

KAIJU-N brings a Cajun Seasoning backbone with infused Japanese minerals and vitamins through superfoods. OLEA432 extra virgin olive oil lends a silky gloss and helps the crust set. Juicy center. Brick red edges. Crowd pleaser. Who doesn't love cajun chicken?
Ingredients
- 4 small boneless skinless chicken breasts (200 gram each)
1½ tbsp OLEA432 extra virgin olive oil
3–3½ tbsp KAIJU-N Cajun seasoning
¾–1 tsp fine sea salt, to taste
Lemon wedges and chopped herbs, optional
Directions
Start the oven
Heat oven to 230°C. Line a small roasting tin with parchment.
Pat the chicken
Pat the chicken dry. Coat with OLEA432, then season evenly with KAIJU-N and salt on both sides.
Oven Roast
Arrange in the tin. Roast 20–25 minutes, until the thickest part reaches 74°C. If the tops darken early, tent loosely with foil.
Rest
Rest 5 minutes, then slice and finish with lemon and herbs.

High-heat, short-time roasting keeps juices in while setting a spice crust; a light oil coat also protects the aromatics in a hot oven.
KAIJU-N layers sweet and smoked paprika with garlic, onion, cayenne and peppers, then adds yuzu zest, kombu and dulse for citrus lift and natural sea-mineral depth. Works cleanly on poultry and seafood.
For larger breasts, allow up to 30 minutes and tent after 20 minutes to avoid scorching.
Serving ideas: roasted peppers or zucchini from the same 230°C oven.
