Superfood Highlight:
Moringa
Fine, unprocessed leaf powder from organically cultivated Moringa oleifera, often called the “miracle tree.” The powder folds into eggs with silent dispersion, releasing a restrained earthy-green tone that elevates color and supplies sustained plant-powered energy without overshadowing the dish.

Crafting a perfect omelet with OEUF 09
Crafting the morning goodness: three premium pasture eggs whisked together with out OEUF 09 blend, then cooked gently over low heat until soft curds form mid-roll. This low and slow technique and constant stir and pan-swipe is endorsed by chefs like Grant Achatz and modern experts for its tender, custardy texture. Moringa brings vibrant green vitamin boost; delicate dill, chive and tarragon echo the French fines herbes tradition; and a whisper of Phú Quốc pepper adds fragrant clarity.

Step 01
MIX
Three pasture eggs. Two grams OEUF 09. One tablespoon water. Whisk to uniform jade; pass through a chinois for silk.

STEP 02
PAN
Brush a 20 cm non-stick pan with beurre pommade and a drop of neutral oil. Keep the heat low so butter stays blond

STEP 03
COOK
Add eggs. Stir with a fork while the wrist shakes the pan; stop once curds just gather. Roll to a pale cigar and slide onto a warm plate.
You might be wondering
What’s the ideal serving size for OEUF 09?
Use 2 g of OEUF 09 per three pasture eggs. This dosage delivers a clean nutrient density and herb lift without overwhelming the custardy texture. It mirrors the classic French practice of adding about 2 g of fresh fines herbes to three-egg omelets.
Can OEUF 09 be used beyond omelets?
Yes. The blend enhances scrambled eggs, egg-based dips, whipped cheeses, or cream soups. Sprinkling into dressings or roasting vegetables brings a measured herb lift reminiscent of fines herbes usage .
Should OEUF 09 be added before or after cooking?
Blend it into eggs before cooking. This allows moringa and pepper to hydrate and integrate as micro-curds form. Delicate leaves soften during cook time. For garnish, finish with a few fresh tarragon tips.
Does OEUF 09 contain any of the 14 EU-regulated allergens?
None of the blend’s botanical ingredients: moringa, dill, tarragon, chive, pepper, paprika, or lemon peel are among the EU‑regulated allergens.
